It turned out rather well. I should have added some more liquid in the afternoon. Possibly turned it down to 250F then as well. Clearly I will have to make it again and again until I get it right.
But the fat on the bacon kept the roast moist enough and I was happy with it.
Husband pronounced it tasty.

Dawn, it's amazing there's any left, but there is so I think we'll have leftover roast tonight.
I have to go out today, but it's only around town. I was out a bit yesterday and went very slowly.

I'm thinking this would cook quite nicely in the crockpot on low! Perhaps not as lovely, but I'm thinking it would stay moist.
My youngest would be appalled, but the other 3 and their dad would love it!
