Gratitude Monday -- Eggs

They'll hold you together.
I am so grateful that I have eggs, that I can eat eggs, and for the fact of the very existence of said chicken babies.
I'm sure I don't have to list their uses, but I will say they're good in potato salads, in baking, and on their own, especially for breakfast.
They come in handy when you don't have anything else in the house or want something quick and substantial.
As my mother used to say, "An egg will hold you together."
The ones above are from my FIL. I'm tickled silly to have them. His chickens live a good life. Their progeny taste the way eggs ought.
If I knew where to look, and wasn't lazy, I'd research where humanity first got the idea that eating poultry eggs was a good idea. For now I'll just say, "Thanks."

My sister has chickens and the eggs do taste great!

I eat a LOT of eggs, and was so glad when the supposed experts stopped warning us away from them.

Hmm, getting hungry for breakfast!

Crabby, I have an egg nearly every day. I never believed they were bad for us. In fact, I haven't believed any dire warnings about food since the great Oat Bran Hoax of '86.

When we ran out of glue on the farm, we used egg whites instead! Eggs are indeed very handy.

Eggs are fabulous, especially from free-range chickens.

I never believed that they weren't good for us, either. My dad ate a fried egg for lunch almost every day of his life!

Bag Lady, good on your dad. Quick, easy, tasty, filling. They must have made fine lunch for him.

I love eggs but have to say I don't think I've ever, at least in my adult life, had a "fresh" one. I'm pretty certain they've all been grocery store-bought. Now I have a quest!

Hilary, I recommend at least once in your life you eat a proper egg.
The more orange the yolk the more the chicken got out and pecked for herself.

I remember being told in school that it wasn't good to eat eggs daily and I said that dad did and he was in fine shape. I can't remember the answer the teacher gave, but I have never believed "studies" about food since.

Reb, glad to hear it. I remember when red wine, chocolate, and coffee were bad for us.
I can't wait for cane syrup's rehabilitation to societal acceptance.

Cane syrup: if only I could find any! We used to buy it at the grocery; then we had to find it when we visited my grandmother in Alabama, where it was locally produced; now it's nowhere, not even my coop. U.S. sugar production has shrunk to nothing.

I am indeed grateful I can eat eggs. I was allergic to them for years.

Mary Anne, I am so sorry to hear you can't get cane syrup. That's awful and inexcusable.
I'm glad you got over your egg allergy.

I DO love the homegrown eggs best! We take even the mere egg for granted at times- don't we:)
I all of a sudden seem to have a craving for an egg-salad-sandwich....

Dawn, they're just one more thing we really don't think about.
But, if they were suddenly taken away from us can you imaging the howls?
