Gratitude Monday -Just Ducky

We had roasted duck for Christmas Eve Dinner. I poured on pear schnaps near the end of the roasting and it worked out well. For that I am grateful.
I thought pizza would be a good home for the leftovers.
This is duck and portobello mushroom. I used duck fat in the dough and lightly sauteed the mushrooms in the fat before throwing them on the pizza.
I am glad it worked.


It required a counterflavour so I took some of the cranberry sauce I served with the roasted duck and added  chipotle.
It worked and for that I am grateful.
We ate this Christmas Night with Greek salad to start and blueberry pie to end. Mike, after the salad course, said, "It's the perfect meal. Bunny food followed by different kinds of pie."

I think that if Frank follows his nose over here, he'll be drooling. You just named about four of his favourite foods. Apparently he made duck yesterday, and I'm hoping he'll save me some.

Hilary, it was pretty good, but very, very rich due to the duck fat. I hope you get some of the duck he made. I am sure he did a fantastic job of it.

Oh my goodness does that sound tasty! I'm grateful for the vicarious pizza, as well as for the actual crab and champagne we had for Christmas dinner last night.

Oops, wait... a Crab eating crab? Apparently it was something of a cannibal Christmas.

Looks yummy, Leah. As Hil mentioned, I roasted a duck yesterday as well, and it turned out nicely. (If she wants a nibble, she'd best get over here soon....)

I'm grateful for many things, and one of them is that you're around to remind folks to be grateful.

Bag Lady, the fat made it a very rich meal. Tasty, though. And you'll never go wrong with pie.

Interestingly enough, I was thinking, as I cut off some turkey for supper tonight, that I might try raising ducks instead of turkeys (in that vague misty future where I'm already successfully raising chickens) because they seem less difficult than turkeys, and because the ones we ate during the years my mother was allergic to turkey were usually quite good. Now I think I'd better go find a duck to roast a little sooner than that.
